we made it illegal in the city of philadelphia to deduct credit card processing fees from workers' tips which unfortunately is legal everywhere else which is why we encourage you to leave your tips in cash rather than on a credit card. we raise the wage in new york state from tipped workers, the most incredible part of the last 12 years has been getting ready to know the stories of thousands and thousands of restaurant workers, some of whose stories i tell in the book and to learn all of the things i never knew that were happening behind the kitchen door. when i came to new york i was told you should tip about 20%. that is what most good new yorkers do, to 20% so i did. .. that represents the interests of the fortune 500 restaurant companies in america. as the head of the nra herman cain struck a deal with congress saying that the nra would not be opposed an increase in overall minimum wage as long as the minimum wage for tipped workers stayed frozen forever. so it has been stuck at the federal level at $2.13 an hour for the last 22 years. it's a little bit better here in maryland at $3
